Delivered by the Academy of Cheese on behalf of Food & Drink Skills Wales and the Fine Food Cluster; the Cheese Grading Course is for those who are seeking a better understanding of fundamental principles and to perfect skills within cheese grading.
The course will be presented by Katy Fenwick, Education Project Manager at Academy of Cheese; a specialist in cheese education, dairy science, technology, cheese making and affinage.
Subjects Covered:
Using the Academy of Cheese established models, this bespoke course will include:
- Using the structured approach to tasting cheese model as a tool for grading, assessing ripeness, how to unlock flavours, understanding cheeses better and to communicate about taste better to customers.
- Looking at the ‘Make Post-Make’ model to gain knowledge of a breadth of cheeses to empower new product development and understand your market position
- Referring to the ‘Academy Flavour Trees’ for marketing and sales vocabulary
- Affinage techniques relevant to two ‘Make Post-Make’ styles of cheese
- Maturation relevant to marketplace, timing and uses
- Cheese defects – Q&A session
Guest speaker: Half an hour discussion about the opportunities within the cheese industry.
Cost:
The course normally costs £300 per person, but eligible businesses will be subsidised*.
For businesses employing less than 49 people – £60
For businesses employing over 50 people – £150
*Food & Drink Skills Wales will discuss eligibility with each business upon registration.
